Spooky Season Recipe: "Caramel" Apple Muffins w/ Chaga + Cinnamon

Spooky Season Recipe

A perfect recipe to have on hand as we gear up for Halloween, these tasty little muffins are a sweet treat I can get behind. Packed with medicinal and culinary mushrooms as well as the power fruit apple - these muffins make a quick and tasty snack for everyone in the home. If you want to pack these full of extra protein, try using almond flour in lieu of regular, or adding chopped nuts to the mix (such as walnut). See an added bonus sauce recipe at the bottom to make these an even more decadent treat!


"Caramel" Apple Muffins

Looking for a sweet treat befitting for the season? these tasty seasonal muffins feature cooked fall apples, warming cinnamon, and a little delicacy from the shroom world known as candy cap mushrooms. Candy caps have a natural butterscotch flavor, giving these scrumptious muffins a caramel twist. Add some Chaga mushroom powder for an added immune boost. These muffins are also excellent sans candy capsChaga with just cinnamon alone as the flavoring spice.

Candy Cap Caramel Apple Muffin Recipe

1.5 apples (peeled, cored, chopped small)

1.25 cups flour

1/4 tsp sea salt

2 tsp cinnamon powder + 1 tsp for sprinkling

1 tsp baking soda

2 organic pastured eggs

1 cup raw cane sugar

1/2 cup softened pastured butter

1/2 tsp vanilla extract

1/2 TBL candy cap mushrooms (far west fungi)

2 TBL chaga mushroom powder (sustainable brand)


Candy Cap Caramel Apple Muffin Directions

If you're using candy cap mushrooms, you'll want to start by powdering them in a high-speed mixer or spice mill to prepare them for the recipe. Once you've done so mix with Chaga (if using) and set aside. Then, heat oven to 350 and prepare your muffin tin with muffin papers, making sure to grease the top of the pan. Peel and chop apples, setting aside (can toss with lemon juice to keep fresh). Beat butter and sugar with an electric mixer on medium speed until light and fluffy. Add eggs one at a time and then add vanilla, beating until combined. Mix flour, mushroom powder(s), baking soda, cinnamon, and salt and add slowly to mixture. Stir in apples and combine well. Spoon into muffin tins and sprinkle tops with a sprinkle of sugar and cinnamon. bake for 25-30 minutes or until a toothpick comes out clean. Let cool on racks.

Optional Treat: Top with a caramel sauce for extra fun! check out @rachelgoodeats recent sauce for a vegan and dairy-free caramel made out of dates! If you top the muffins with this sauce I recommend cutting the sugar back in the recipe so they aren't too sweet!



Please Note: When purchasing Chaga mushrooms always purchase from a sustainable

retailer; these mushrooms take a long time to grow and should be collected

mindfully and used sparingly. Reishi can be used as an alternative.
